Open Settings → Appearance, or press ⌘,. These settings are saved on this computer, not in the workspace.
Theme
System follows your computer's light or dark mode. Light and Dark stay put.
Palette

Every palette has a light and a dark version.
Accent colour
The accent colours buttons, selections, checkboxes and links: Ember, Blue, Violet, Emerald, Rose or Amber.
Text size
Small, Default or Large, for the text of every page.
To change one page instead, use Style, Small text and Full width in its ••• menu. Those are saved in the page itself. See Pages and sub-pages.
